Skate with Capers and Dill sauce

A delicious, classic recipe for cooking flat fish.
- Bring a pan of water to boil. Add the potatoes to cook until tender. Add the vegetables when the potatoes are almost cooked.
- Heat the olive oil in a pan until hot. Add the skate wings and fry until golden brown. Allow 3-5 minutes on each side. Set them aside when cooked.
- Melt a generous piece of butter to a pan, add the garlic and saute until fragrant, about 1 minute.
- Add the white wine and deglaze the pan.
- Add the capers, lemon juice and chopped dill to the sauce and remove from the heat.
- Pour the butter sauce over the skate and serve with the cooked green vegetables and potatoes.

- Dover sole fillets
- 1/2 tablespoon oil
- 2 cloves garlic (chopped)
- 1/2 cup of white wine
- 2 tablespoons capers
- Butter

- 1 lemon zest and juice
- 2 tablespoons dill (chopped)
- 1 tablespoon of white wine
- Potatoes and green vegetables
