Ray Wing Portions (2 x 200 - 300g)
Landed in Newlyn and Plymouth, our Ray Wings are aptly named: this fish is a member of the ray family, whose pectoral fins are so enormous that they have the appearance of wings.
Ray (also known as Skate) wing is delicious, with a taste similar to scallops, and has a unique, firm texture due to a high collagen content in the fillet.
This also makes it incredibly moist when cooked, with a lovely springy mouthfeel.
Those in the know cook skate simply with brown butter and capers, which complement both the texture and flavour of this unusual cut perfectly.

Please note that due to market conditions, sometimes dictated by the weather on rare occasions we may have to send you frozen fish, which could arrive partially-defrosted.
Fresh fish is best eaten straight away, or within 3 days.
Store in your refrigerator and pack with ice if possible.
To freeze; place the fish straight in the freezer upon delivery and aim to consume within 3 months.
TIP: Write the date on the packaging before freezing.
Do not re-freeze your fish after defrosting.
