Chilli Ginger Steamed Mackerel

A platter of warm and delicious mackerel steamed with Asian spices.
- Boil the rice in a pan of boiling water on a medium heat. Sieve through when it is cooked.
- Cut the mackerel into small pieces across the length of the fish.
Place the fish on a plate and mix with the sliced ginger. Place the fish and ginger mix in a steamer and cook for 5-7 minutes. - In the meantime, heat up some oil in a sauce pan. Throw in the fresh chilli and fry for 10 seconds, remove the pan from the heat before adding the dark soy sauce.
- When the mackerel is cooked, pour the chilli and oil over the dish and serve with fresh basil and rice.
