SMOKED SALMON ROULADE - Fish For Thought

A light, elegant dish that’s perfect for a refreshing lunch or sliced into bite-sized pieces for stylish drinks canapés. Delicate smoked salmon is layered with a creamy salmon and chive filling, finished with crisp cucumber for freshness and texture.

Ingredients

  • 300g sliced smoked salmon
  • 150g cream cheese
  • 2 tablespoons natural yoghurt
  • 1–2 tablespoons fresh chives, finely chopped
  • ½ cucumber, thinly sliced lengthways

Method

  1. In a small bowl, combine the cream cheese, natural yoghurt, and chopped chives. Mix until smooth and evenly combined.
  2. Place a sheet of greaseproof paper on your work surface. Lay the long slices of smoked salmon slightly overlapping to form a rectangle.
  3. Evenly spread the cream cheese mixture over the smoked salmon, leaving a small border around the edges. Arrange a thin layer of cucumber slices over the top.
  4. Starting from one long edge, carefully lift the greaseproof paper and gently roll the salmon into a tight roulade. (Alternatively, you can fold it in half for a simpler presentation.)
  5. Wrap the roulade tightly in cling film and refrigerate for at least 1 hour, or as long as possible, to firm up.
  6. Remove from the fridge, unwrap, and slice into 1cm rounds. Serve chilled.
