Ingredients
- 2 cooked lobsters
- 2 fennel bulbs, very finely chopped
- 1 red onion, very finely chopped
- 1 pomegranate, seeds removed
- Zest and juice of 2 limes
- 5 tablespoons olive oil
- 2 tablespoons fresh coriander, finely chopped
- 2 tablespoons fresh mint, finely chopped
- 2 tablespoons fresh parsley, finely chopped
- Salt and freshly ground black pepper, to season
Method
- Remove the meat from the lobster shells and slice into bite-sized pieces, roughly 1 inch thick. Set aside.
- Very finely chop the fennel bulbs and red onion. Finely chop the coriander, mint, and parsley.
- In a large bowl, combine the lime zest, lime juice, and olive oil. Season generously with salt and freshly ground black pepper.
- Add the lobster meat, fennel, red onion, pomegranate seeds, and chopped herbs to the bowl. Gently toss everything together until evenly coated in the dressing.
