Ingredients
- 400g crabmeat
- Large pinch of cayenne pepper
- Zest and juice of ½ lemon
- 300g butter
- Fresh parsley leaves, to decorate
Method
- In a bowl, combine the crabmeat, cayenne pepper, lemon zest, and lemon juice. Season generously with salt and freshly ground black pepper
- Spoon the mixture into 8 small ramekins or 1 large dish, pressing down lightly to compact.
- Melt the butter gently in a saucepan, then pour over the crab until covered with a thin layer of butter. Top each with a parsley leaf, if desired.
- Leave to cool, then chill in the fridge until set. (It will keep for up to 2 days in the refrigerator.)
- For picnics or travel, transport in a chiller bag to prevent the butter from melting.
