A beautifully fresh and vibrant lobster dish bursting with citrus and aromatic herbs. Sweet, tender lobster meat is tossed with crisp fennel, juicy pomegranate, and a bright lime dressing, creating a light yet luxurious meal.

    Ingredients

    • 2 cooked lobsters
    • 2 fennel bulbs, very finely chopped
    • 1 red onion, very finely chopped
    • 1 pomegranate, seeds removed
    • Zest and juice of 2 limes
    • 5 tablespoons olive oil
    • 2 tablespoons fresh coriander, finely chopped
    • 2 tablespoons fresh mint, finely chopped
    • 2 tablespoons fresh parsley, finely chopped
    • Salt and freshly ground black pepper, to season

    Method

    1. Remove the meat from the lobster shells and slice into bite-sized pieces, roughly 1 inch thick. Set aside.
    2. Very finely chop the fennel bulbs and red onion. Finely chop the coriander, mint, and parsley.
    3. In a large bowl, combine the lime zest, lime juice, and olive oil. Season generously with salt and freshly ground black pepper.
    4. Add the lobster meat, fennel, red onion, pomegranate seeds, and chopped herbs to the bowl. Gently toss everything together until evenly coated in the dressing.
    5. Serve immediately with hot, buttery new potatoes and a chilled glass of white wine for a perfectly balanced and refreshing meal.
