Cornish Crab - Understanding our Process

At The Cornish Fishmonger, we are dedicated to sourcing only the finest Cornish crabs, landed fresh to us by our local fishermen each day from the clear coastal waters of Cornwall.

Every crab is expertly cooked on the day it arrives to preserve its exceptional freshness, delicate flavour and natural sweetness. The finest specimens are reserved for customers who choose to enjoy them whole, with each crab is individually assessed to ensure an excellent weight-to-size ratio and the consistently high standards for which we are known.

As with all wild, natural seafood, seasonal variations are part of nature's cycle. At certain times of the year, female crabs may contain a lower proportion of brown meat and on occasions may have a slight grey tinge in colour. This is entirely natural and does not affect the quality or quantity of the sweet, succulent white meat, which remains consistently plentiful.

White meat can be found throughout the claws structure, legs, and body (pouch). For the best dining experience, gently separate the joints and use the tip of a fork or crab pick to carefully extract the meat. Many customers are pleasantly surprised by just how much delicious white meat can be enjoyed from every crab, especially within the body structure.
