Using delicious fresh Mackerel from Cornish waters, with a homemade tartare sauce and mushy peas puree - it's possibly the simplest (and tastiest) burger you've ever made!

Ingredients:
- Fillets of Mackerel (1per person)
- White rolls
- Green salad
- 200g frozen peas (defrosted)
- 2 tsp mint sauce
- 4 tbsp mayo
- 1 tsp dijon mustard
- Handful flat leaf parsley
- Gherkins/capers
- 1 clove garlic (grated)
- 1 lemon
1. Start by blitzing the peas & mint sauce with a little salt to your desired consistency. Taste and season.
2. Then roughly chop the gherkins, add to the mayo and mustard, along with some capers. Chop the parsley and then grate the garlic & lemon, squeeze a little juice in. Season and taste.
3. Heat a frying pan with a small amount of veg/rapeseed oil and the lay the mackerel skin side down and press down gently. Fry until you see the fish turn from pink to white and then flip over nd remove from the heat.
4. Build your burgers, spread the pea mix on the bun, tartare on the bun half with the mackerel and salad in between!
