A fun and spooky Halloween canapé, these smoked salmon “ogre eyes” combine creamy cheese, tangy olives and fresh dill for a deliciously eerie bite that’s sure to impress your guests.

Serves: 8 canapés
Ingredients
Smoked salmon, 8 strips
Cream cheese, soft and spreadable (or block cream cheese, softened to room temperature)
16 pimento-stuffed green olives, sliced into rounds (plus a few extra for garnish)
A few sprigs of fresh dill, for garnish
Method
1. Prepare the ingredients
Slice the smoked salmon into 8 even strips. Cut 16 pimento-stuffed olives into thin rounds and set a few aside for decoration. Pick small sprigs of dill for garnish.
2. Assemble the canapés
Spread a thin layer of cream cheese along each strip of smoked salmon. Roll or fold the salmon into neat, bite-sized pieces. Press an olive slice gently onto the top of each piece so it sticks to the cream cheese, then finish with a tiny sprig of fresh dill.
Arrange the canapés on a platter so they resemble spooky “ogre eyes.” Serve straight away, or chill until ready to enjoy.
Fishmongers Tip - For an extra Halloween touch, drizzle a fine line of sriracha or beetroot purée around each olive to create a bloodshot effect - Gross!
