A Day at The Cornish Fishmonger with Cornwall’s Future EHPs
Recently, we were delighted to open our doors to a group of dedicated students currently studying for their Environmental Health Practitioner Degree. These individuals aren't just students; they are already serving our community within Cornwall Council as Environmental Protection Officers and Business Regulatory Services professionals.
Guided by our Technical Manager, Thom Seager, the group went beyond the counter to see the heart of our operation.

A Masterclass in Cornish Species
The morning started with the arrival of the fresh catch. For an Environmental Health Practitioner, being able to accurately identify species and recognise the "gold standard" of freshness is vital. Thom led a deep dive into the various Cornish species landed that morning, with a particular focus on the John Dory, Cornish Sole (Megrim)and Dover Sole. By studying the patterns and physical attributes of this unique fish, the students gained practical, hands-on experience that textbooks simply can't provide.

Health, Safety, and High-Risk Excellence
The tour moved into our specialised High Risk department, where the students observed the rigorous protocols involved in handling local Cornish crab.
They were shown the entire process:
Dispatch: Ensuring the highest welfare and safety standards.
Cooking: Precision timing and temperature control.
Hand-Picking: Maintaining a sterile environment to ensure our fresh crab meat reaches you in peak condition.

We are proud to support the Cornwall Council Apprenticeship program. By providing a real-world look at health & safety and sustainable processing, we hope to help these students achieve their degrees with a thorough understanding of the seafood industry.
