Cornish Sole (also known as Megrim)
Cornish Sole is a deep water flatfish commonly caught off the Cornish coast, and is gaining popularity due to its sustainability.
There’s good reason to choose Cornish sole beyond it being environmentally friendly too – this flatfish makes for some lovely eating when cooked properly. Despite its reputation of being second rate in comparison to its other flatfish cousins.
Served on the bone in a rich olive and tomato sauce (add capers at your discretion) or poach in milk and flake into mashed potatoes along with fresh parsley and lemon zest for some simple fishcakes.
