Cod is a big coldwater fish, prized for their dense, yet flaky flesh. They're a classic for a reason: cod fillets have a fabulously subtle flavour and is incredibly versatile too. It holds its shape well enough for fish stews, but cod does equally well wrapped in proscuttio and pan fried for a quick but impressive fish dish.

As Cod stocks have moved North leaving Cornwall with less supplies of fish than we had in the past, we now source our Cod from the North Sea; we feel the Scottish and Norwegian stocks are in very much better condition and produce great quality fish.
