Our smoked salmon is cured by The Cornish Fishmonger to a special family recipe and smoked over natural oak chippings.
Salmon is gorgeous when smoked due to its high fat content taking on all those lovely complex flavours from the oak chips. Hand smoked to our own cure, in our very own kilns, each salmon side is hand checked for quality before being sliced in a variety of ways to suit your needs.

This salmon has a nice delicate smoke on the nose and an attractive appearance. Decent bite with gentle creaminess and the smokiness did not over power the fish. Well balanced with subtle fishiness.
Clean finish. An attractive apricot salmon, sliced well. We enjoyed the cure. The balance of salt is delicious and the level of smoke if spot on! It had a pleasant mouthfeel. Delicious.

A very fresh aroma, natural smokiness. Everything we were hoping for.
A beautiful, vibrant, rich colour. Looks incredibly fresh. Beautifully presented in thin, even ‘D’ shaped slices. Great attention to detail. Content lives up to its packaging.
Silky texture, melts in the mouth. Quite a firm texture, not chewy at all and not too hard. Doesn’t fall to pieces. Cuts beautifully. Faultless.
This is truly delicious – there’s a delicate, natural smokiness to it, not too overpowering – just the right level of smoke. Deep, rich and indulgent flavour. The inner layers of each slice have a more subtle smoky flavour, the outer layers are incredibly rich and full of flavour. Can’t fault it in any way. A simple product that has been carefully cured and smoked to perfection.
