Rainbow trout (Cornish) 400-600g
Sourced exclusively for us from a sustainable fishery near Boscastle, our Rainbow Trout is a delicious fish which makes an incredible centrepiece at the dinner table due to their large size.
Rainbow trout get their name from their silvery skin which glimmers with hues of pink, blue and green. They’ve got a pretty lateral pink stripe all the way down the body and their flesh is pink, firm and oily.
Commonly baked whole in foil or paper, rainbow trout do well stuffed with fresh herbs and lemon slices.
The flesh has a texture similar to salmon but is milder in flavour.
Don’t forget to make the most of the fat under the skin, which turns wonderfully crispy when pan-seared.
