Don’t leave coley out in the cold! Often overlooked in favour of cod or haddock, coley is a white fish with a mild and flaky texture when cooked and more sustainable than its larger cousins. An inexpensive fillet coley is perfect for those casual weeknight dinners – a big thumbs up for families. Coley has a thick skin which is delicious when simply pan fried with lots of salt, to get a really good crispy sear. Serve with mashed potatoes and spring greens for a simple but stunning supper.
Fresh fish is best eaten straight away, or within 3 days. Store in your refrigerator and pack with ice if possible. To freeze; place the fish straight in the freezer upon delivery and aim to consume within 3 months. TIP: Write the date on the packaging before freezing. Do not re-freeze your fish after defrosting.
