Skate wings have long thin sections of juicy flesh either side of a simple bone. Sized between 300 and 600 grams, they make good eating and are very under-rated - a great alternative to more expensive flatfish. Cook exactly as you would plaice and dover sole, it's flesh doesn't require much more flavouring than butter and lemon! This fish will arrive skinned and ready to cook.

LandedWe tend to buy our skate from Plymouth or Looe fish markets; the fish is great quality and the boats there land their skate ready 'winged'.
