Wing of St Mawes Secret Seafood Showcase

On 15th May 2013 Wing of St Mawes, The Cornish Fishmonger held its first 'Secret Seafood Showcase' in partnership with the Bordeaux Quays Cookery School in Bristol.

We invited five chefs to come and cook a dish without prior knowledge of the ingredients - with fish supplied by ourselves and veg kindly contributed by Charlie Hicks - in the fantastic facilities provided by the cookery school at Bordeaux Quays. Each dish was also expertly matched to an artisan beer by Andy from the Wild Beer Co.

Kicking off the event was The Cornish Fishmonger himself, Rob Wing, giving an expert filleting demonstration; during which he spoke about the history of fisheries of Cornwall.
Then the five chefs were presented with their surprise ingredients - Cornish turbot, mussels and clams - and given time to prepare their delicious dishes.

In the evening, guests from restaurants all over Bristol were invited to come and enjoy the seafood dishes on offer; starting with canapes produced by Bordeaux Quay Cookery School using our home smoked salmon and smoked crevettes. They then later sampled the dishes prepared by the chefs. It was amazing to see what variation can be created with the same few ingredients!
