The Ultimate Lobster Club Sandwich
Dissolve the brown sugar in the water and use as a syrup to brush over the bacon slices, place in an oven at 180c and cook until the bacon caramelises
Split each roll in half and toast on one side
Thinly slice the lobster tail and claw meat and put to one side.
To assemble, thinly spread some lemon Mayonnaise on two slices of toast. Lay sliced tomato and lettuce leaves on one slice of the toast, then some of the caramelised bacon, then pile up the sliced lobster. Season and then lay the other slice of toast, mayo side down on top of the lobster, cut the sandwich in half and serve.

- 1 whole lobster (tail and claw meat), cooked
6 thin slices smoked bacon
2 good quality white or granary rolls
1 large plum tomato (sliced)
1 baby gem lettuce (washed)
2 tbsp mayonnaise flavoured with lemon juice
1 tbsp brown sugar
2 tbsp water
