Thai Spicy Soup
How to make delicious Thai style spicy seafood soup flavoured with fresh lime and lemon grass.

Instructions
Clean and peel the king prawns. Cut the king prawns, mushrooms, squid and peppers into bite size.
Wash and dry the chilli, lemon grass, coriander and lime leaves. Slice the lemongrass and chilli and chop the coriander.
Bring the chicken stock to boil in a saucepan. Add the lemon grass and lime leaves and continue boiling for 10 minutes.
Add the chopped vegetables and simmer about 5 minutes.
Add the squid and prawns. Bring to the boil for around 2-3 minutes, then remove from the heat.
Flavour the soup mixture with soy sauce (or fish sauce), lime juice, lime zest, chilli, tomato paste and coriander.

- Seafood Ingredients:
7-8 king prawns
2 fresh squid tubes
Or
4 langoustines
2 monk fish portions - Other Ingredients:
- 350g mushrooms.
- 1 stalk lemon grass
- 7-8 lime leaves
- 1 lime
- 2 tsps coriander.
- 5 pieces of chilli
- 3 tablespoons soy sauce (or fish sauce)
- 2 tablespoons tomato puree.
- 5 cups chicken stock
