How to make delicious Thai style spicy seafood soup flavoured with fresh lime and lemon grass.
- Clean and peel the king prawns. Cut the king prawns, mushrooms, squid and peppers into bite size.
- Wash and dry the chilli, lemon grass, coriander and lime leaves. Slice the lemongrass and chilli and chop the coriander.
- Bring the chicken stock to boil in a saucepan. Add the lemon grass and lime leaves and continue boiling for 10 minutes.
- Add the chopped vegetables and simmer about 5 minutes.
- Add the squid and prawns. Bring to the boil for around 2-3 minutes, then remove from the heat.
- Flavour the soup mixture with soy sauce (or fish sauce), lime juice, lime zest, chilli, tomato paste and coriander.
