- 125g smoked haddock, chopped finely
- 25g tomato concasse, finely diced
- Half a shallot, finely diced
- 1 tsp parsley, chopped
- 30g cucumber, peeled finely diced
- 1 small potato, diced in small cubes and boiled
- 1 tbsp mayonnaise
- 1/2 tsp Dijon mustard
