Smoked Haddock Tartare
Simply place all the ingredients in a bowl and bind with the mayonnaise, season with salt and pepper.
The mixture can then be served on thin slices of toasted baguette, savory biscuits or blinis.

- 125g smoked haddock, chopped finely
25g tomato concasse, finely diced
Half a shallot, finely diced
1 tsp parsley, chopped
30g cucumber, peeled finely diced
1 small potato, diced in small cubes and boiled
1 tbsp mayonnaise
1/2 tsp Dijon mustard
