Simply Grilled Kippers

An extraordinarily simple way to cook delicious kippers - no fuss, plenty of flavour.
Ingredients
  • 2 kippers (AKA herring)
  • 25g softened butter
Instructions
  1. Heat the grill to high.
  2. Cut the head off the fish.
  3. Spread the flesh side of one kippers with half the butter.
  4. Lay the other one flesh side down on top of the butter, like a sandwich.
  5. Lay them under the grill and grill for 5 minutes.
  6. Carefully turn the kipper sandwich over and grill for a further 5 minutes.
  7. To serve:
  8. Separate the Kippers, carefully remove any bones.
  9. Arrange buttered side up on heated plates, spread with remaining butter and garnish with triangles of bread and butter.
  10. If you're feeling a bit more peckish, kippers are also delicious with baby new potatoes.
