Simply Grilled Kippers

An extraordinarily simple way to cook delicious kippers - no fuss, plenty of flavour.
- Heat the grill to high.
- Cut the head off the fish.
- Spread the flesh side of one kippers with half the butter.
- Lay the other one flesh side down on top of the butter, like a sandwich.
- Lay them under the grill and grill for 5 minutes.
- Carefully turn the kipper sandwich over and grill for a further 5 minutes.
To serve
- Separate the Kippers, carefully remove any bones.
- Arrange buttered side up on heated plates, spread with remaining butter and garnish with triangles of bread and butter.
- If you're feeling a bit more peckish, kippers are also delicious with baby new potatoes.

- 25g softened butter
