Baked Garlic & Parsley Mussels
Ideal for light lunches and party appetisers.
Instructions:
1. Preheat the oven at 180C or gas mark 7.
2. Put the half shell mussels on a baking tray.
3. Sprinkle over the garlic, parsley and lemon juice and season with pepper. Dot the tops with butter.
4. Bake in the oven for 3-4 minutes, ready to serve.

- 1kg mussels, cleaned
- 1 tablespoon of garlic, chopped
- 2 tablespoon of parsley, chopped
- Squeeze of lemon juice
- Pepper
- 25g butter
