Baked Garlic & Parsley Mussels

Ideal for light lunches and party appetisers.
- Preheat the oven at 180C or gas mark 7.
- Put the half shell mussels on a baking tray.
- Sprinkle over the garlic, parsley and lemon juice and season with pepper. Dot the tops with butter.
- Bake in the oven for 3-4 minutes, ready to serve.
