Baked Cornish sardines with orange and pine nuts

Cornish Sardine fillets, served with orange zest and juice and pine nuts.

  1. Preheat the oven to Gas 6, 200C, fan oven 180C.
  2. Zest an orange, mix together the oil, pine nuts, orange zest and juice, and parsley.
  3. Place the sardines into an ovenproof dish and spoon the filling into and on the sardines.
  4. Drizzle over with good quality olive oil, season and bake for 10-12 minutes until the fish is cooked through. Season to taste.
