Baked Cornish sardines with orange and pine nuts

Cornish Sardine fillets, served with orange zest and juice and pine nuts.
- Preheat the oven to Gas 6, 200C, fan oven 180C.
- Zest an orange, mix together the oil, pine nuts, orange zest and juice, and parsley.
- Place the sardines into an ovenproof dish and spoon the filling into and on the sardines.
- Drizzle over with good quality olive oil, season and bake for 10-12 minutes until the fish is cooked through. Season to taste.
