Pan fried mackerel with porridge oats

Juicy, Omega3 rich mackerel fillets with a crispy oat coating

  1. Firstly, pour the porridge oats into a shallow dish (any type will do), coat both sides of each fillet and pat gently to help the oats stick to the fish.
  2. Heat a non stick frying pan with some oil, lay the fillets skin side down and cook until crisp and nutty brown in colour.
  3. Turn over and finish cooking; the total cooking time should be around 5 to 6 minutes, depending on fillet size.
  4. Remove the mackerel fillets from the pan and place on kitchen paper to remove any excess oil. Plate up and serve.
