Leeky Mussels

Prep time: 5 mins | Cook time: 15 mins | Serves: 3-4


  • 1kg mussel
  • 25g butter
  • 6 rashers of smoked streaky bacon, chopped into little bits
  • 1 large leek diagonally sliced
  • Handful of thyme sprigs
  • Glass of cider or white wine for you and another for the dish
  • Crusty bread


  1. Give your mussels a good rinse in cold water.
  2. Squeeze each mussel closed and leave on the side for 2 minutes discarding any that have not slightly reopened after 2 mins and those with broken shells. Don't worry, these packs are overstocked to allow for the odd discard
  3. Heat half the butter in a pan and add the bacon for 3 mins until it starts to brown
  4. Add your leeks and thyme and put a lid over your pan for 5 mins
  5. Turn the heat up and add your mussels and cider or wine
  6. Cover and cook for 5 mins making sure to shake the pan occasionally, until the mussels have opened. Discard any that do not open
  7. Pour the contents of your pan into a bowl
  8. Place the plan back on the heat and add the remaining butter for 1 minute
  9. Pour butter and juices mix over your mussels and enjoy crusty bread
