Citrus Lemon Sole Sticks
Mix all of the marinade ingredients together and place in a shallow dish.
Halve each fillet lengthways and thread onto skewers. Place the skewers in the marinade and turn until covered. Leave to marinate for up to 15 minutes.
Cook under a preheated grill or on a barbecue for about 6 minutes turning occasionally.
Heat any remaining marinade in a small pan and pour over the skewers.
- 4 x 170g (6oz) lemon sole, skinned
For the marinade:
1 lemon, juice and zest
2 limes, juice and zest
1 tablespoon clear honey
1 tablespoon olive oil
1 teaspoon ground coriander
1 teaspoon paprika
1 teaspoon ground cumin
1 tablespoon chopped fresh mint
