Citrus Lemon Sole Sticks

Zesty lemon sole skewers perfect to encourage even the fussiest of fish eaters

  1. Mix all of the marinade ingredients together and place in a shallow dish.
  2. Halve each fillet lengthways and thread onto skewers. Place the skewers in the marinade and turn until covered. Leave to marinate for up to 15 minutes.
  3. Cook under a preheated grill or on a barbecue for about 6 minutes turning occasionally.
  4. Heat any remaining marinade in a small pan and pour over the skewers.

For the marinade:

  • 1 lemon, juice and zest
  • 2 limes, juice and zest
  • 1 tablespoon clear honey
  • 1 tablespoon olive oil
  • 1 teaspoon ground coriander
  • 1 teaspoon paprika
  • 1 teaspoon ground cumin
  • 1 tablespoon chopped fresh mint
