Christmas Baked Oysters With Pancetta And Parmesan Breadcrumbs

Prep time: 10 mins | Cook time: 5 mins | Serves: 6 as a starter
 

Ingredients:

  • 2 slices of stale ciabatta or other white bread
  • 2 tbsp of freshly grated parmesan cheese or pecorino Romano picante
  • 1 tbsp pine nuts
  • 30g pancetta, chopped finely
  • 1 tablespoon of chopped fresh flat-leaf parsley
  • A good grinding of black pepper
  • 18 shucked oysters in their half shells
  • 1 lemon, cut into wedges

Instructions:

  1. Combine the pine nuts, parmesan and ciabatta in a food processor and blend until coarse crumbs
  2. Heat a skillet over medium-high heat, and add a splash of olive oil. Add pancetta and fry until crisp, stirring frequently
  3. Remove from heat and leave to cool for 5 minutes as to not melt the cheese to early
  4. Stir the pancetta into pine nut mixture, and add the parsley and black pepper
  5. Carefully arrange oysters in a single layer on a baking sheet, and spoon 1 tablespoon bread mixture onto each oyster
  6. Bake at 200Ā° for 5 minutes or until oysters are opaque and the breadcrumbs are golden
  7. Serve with lemon wedges and lashings of champagne
