The Cornish have revered this fish for decades. The cooked flesh of this green/silver skinned fish is perfectly white and is now very popular with chefs; we hear a popular supermarket chain calls it "Colin"? These fillets will arrive to yu ready to cook.
Pollock fillets will bake, grill, pan fry, deep fry & roast. Try roasting a chunk of fillet in a hot oven and serve with chilli salsa, or wrap in a rasher of bacon and bake in the oven.

An excellent fish
Kirstie, Innerleithen - I've only relatively recently been buying pollock as it doesn't seem to figure much in Scotland. I was pleasantly surprised at how good it is. Firm-fleshed with a good flavour. I've used it recipes for cod or monkfish where it worked well and I believe that it's not over-fished.
