We only buy large halibut. We fillet the fish and cut it into around 160g boneless portions. Our Halibut fillet portions are available individually vacuum packed and frozen. See our recipe section for cooking ideas. Please note the photograph shows fillets before portioning.
Halibut is a cold water fish caught from northern Atlantic fishing ports. We source our halibut from Scotland. If wild fish is not available we buy farmed fish from Scotland; these fish are excellent quality.
Wild fish is available in the summer months in good volumes and in lesser amounts in other seasons. Farmed fish is available year round.
Halibut fillet can be baked, grilled, poached, pan fried or roasted. Try pan frying slowly until coloured, finishing cooking in a hot oven. De-glaze the pan with white wine, fish stock and cream.
Our fish is landed daily and comes in all different sizes - just as nature intended! Our prices are given in 'weight per kilo' and where possible we are able to offer a price per portion. We will do our best to get your order as close to the kilo weight as possible and always within a 20% variant to the size you choose.
