Dover sole is the best of the sole family,  they come between 400g and 450g.  A fantastic flavour, quick and easy to cook. Dover sole has a tough grey skin; for your ease we remove it for you, so your sole comes ready to cook and enjoy.

Fishing boats from Newlyn land fantastic quality dover soles; this is our preferred port to buy from.

Dover sole is at its best quality in the summer months. Avoid buying this fish in March as they tend to carry roe at this time.

Dover sole will grill, poach and pan fry. Try pan fried and serve with chopped salted capers and lemon juice.
