Beautiful fish
Kirstie, Innerleithen - Not the poor relation of turbot. I've bought fillets quite often and they have been impeccably fresh and delicious. They freeze well if tightly packed and frozen fast. Ask for the carcass: it makes wonderful stock for soups and sauces.
