The Gilt head sea bream gets its name from the golden band accross its head. Silver in colour and around a pound in weight these fish are the perfect portion sized fish. This fish will arrive to you gutted ready to cook.
Gilt head sea bream is very rarely found as a wild species. This fish is farmed.

Gilt head sea bream are ideal for baking, roasting and cooking on the BBQ. Dampen some salt and pack around the fish, bake until cooked, remove the salt and drizzle with virgin olive oil?

Rather like sea bass
Kirstie, Innerleithen - I tried this fish for the first time recently as I read that this is the best flavoured variety of bream. It certainly had a lovely flavour and is similar to small sea bass. I'd slightly give the edge to sea bass, but there's not a lot in it. The fillets come de-scaled and grill to perfection brushed with olive oil. I only grill the skin side of these small fish so as not to dry out the flesh and they cook very quickly without turning.
