Cornish King Scallops
New Season Mint
KING SCALLOPS SEARED WITH GARDEN MINT AND LIME DRESSING
This is a prefect spring or summer shellfish dish; the rich creamy flavour of the scallops blend perfectly with the fresh flavour of new seasons garden mint and lime juice. For cooking and preparation time allow twenty minutes. This recipe feeds 2 to 3 people
Shopping1 dozen scallops
Garden mint
Lime
White wine
Vegetable oil
Butter
Sea Salt
Method
Chop a few leaves of garden mint.
Heat a non stick frying pan, add a teaspoon of oil and leave to warm. When the oil is hot and close to starting to smoke add the scallops and leave to cook and caramelize. Turn them over and cook on the other side. This should take around three minutes.
Remove the scallops and dress on plates ready to serve.
Deglaze the frying pan with a little dry white wine; allow the liquid to reduce by half. Enrich with knobs of softened butter, Just before you are ready to serve add the chopped mint and a squeeze of lime juice. season with sea salt and pepper to taste.
Serve with a season salad.
