Putney Sauce
ROASTED CORNISH COD FILLET WITH PUTNEY SAUCE
This dish is so quick and easy, it can be prepared and cooked in less than 20 minutes. Putney sauce is the perfect accompaniment for any white fish; its rich tomato flavour and colour, with red peppers and a hint of chilli is a perfect match for Cod fillet.

Method
Heat an oven to 200C. warm a frying pan and add some extra virgin olive oil.
Add the cod fillet skin side down in to the pan and cook for 3 to 4 minutes, until the skin is coloured; turn the fish over and place in the oven for a further 5 minutes or until just cooked.
Remove from the oven and place on a moderate heat, add Putney sauce and allow to warm through. Add a little tapenade to taste but be careful not to loose the sweet taste of the sauce.
Season to taste with salt and pepper; garnish with chopped parsley and serve with a green salad and hot bread, or boiled new potatoes.
