FRESH CORNISH COD FILLET WITH TOMATO SAUCE

The idea of this dish is to feed children fresh fish without fatty batter or other coatings. I have included two sauces that we offer but, good old tomato ketchup will do the job just as well.

Oven chips
Frozen Peas
Sun flower oil
Salt & pepper
Flour


Method
Heat an oven to 220 C and cook sufficient chips for the number of children being fed.

Boil a pan of hot water and cook the frozen peas, if you decide to include them .

Heat a frying pan with some sun flower oil.

Cut the cod fillets into finger shapes, leaving the skin on and coat with seasoned flour. Add the fish to the hot oil, season and cook until the skin is crisp. Place the pan into a hot oven to finish cooking for the last few minutes.

Remove when cooked and serve with peas and chips and the tomato sauce of your choice.
