GRILLED SALMON STEAK WITH WATERCRESS AND CREME FRAICHE

We think this salmon recipe is easy to prepare and quick to cook making it ideal for a working Mum who's home late and has a family to feed. Thanks Mrs Barnes from Suffolk.

Shopping

Salmon steaks or fillets
Creme fraiche or Greek yoghurt
Watercress
Green beans


Method

This can all be prepared before hand if desired.

If you are using frozen fish place sufficient salmon steaks or fillet portions on to a plate in the fridge. They will defrost slowly during the day and should be ready to cook by the evening.

Chop some watercress finely and add to the creme fraiche. Place in to the fridge to chill.

Steam or boil the beans until "al dente", drain and keep hot.

Heat a grill to a medium hot heat, place the salmon onto an oiled baking tray, season to taste and grill until lightly coloured.

Place the salmon on to a hot plate, garnish with a generous spoon full of the creme and some beans.
