CORNISH FISHCAKES

Fish cakes are a simple dish to prepare and are enjoyed by most young children, and some older ones as well! Try adding cooked prawns, crab meat or flaked salmon for a change.

Shopping list

Cooked white fish - allow 100grams per serving
Potatoes
Butter
Zest of a Lemon
Salt & Pepper

Method

Peel and boil the potatoes until tender, drain and allow to cool.

Mash the potatoes and blend with the cooked fish, butter and lemon zest.

Add any extras, such as cooked and peeled prawns, flaked salmon or crab meat; season to taste.

Turn out the mixture on to a floured chopping board and separate the mixture. Pat into cakes, the size depends on how big you like them

Fry the fish cakes in butter until crisp.

Serving suggestion

Serve with chopped parsley and your choice of dipping sauce or, maybe sweet chilli dip?
