CORNISH MACKEREL PANFRIED WITH CRISPY ROLLED OATS
This is an "all round" healthy fish dish; it has Omega3 and rolled oats, both being current buzz words in a healthy diet at the moment. This recipe will work just as well with herring or sardine fillets.

4 Mackerel fillets1 cup Porridge Oats

Method
Pour some porridge oats in to a shallow dish (any type will do), coat both sides of the fillets and pat to help the oats stick to the fish.
Heat a non stick frying pan with some oil, lay the fillets skin side down and cook until crisp and nutty brown in colour.
Turn over and finish cooking; the total cooking time should be around 5 to 6 minutes, depending on fillet size.
Remove the fillets from the pan and lay on kitchen paper to remove any excess oil. Plate and serve with some diced preserved lemon.

Mrs Childs suggests you serve a citrus salad with this dish as the sharp fruits and crisp fish work well together.
