OYSTERS WITH CAVIAR

Oysters with caviar makes a perfect light summer lunch or, an evening starter for a supper or dinner party. It's quick, easy and simple and tastes great!

Shopping list

12 fresh oysters per person
1 x 100g avruga caviar - serves 2 to 3 people
Lemon
Your favourite bread

Method

Place a tea towel in your left hand, this will protect your palm from the sharp shell of the oyster. Ideally if you have an oyster knife use it but if not find an old short kitchen knife with a strong blade.

In your left hand place an oyster with its hinge facing to the right. Insert the point of the knife into the hinge; using a rocking motion release the top shell. Hold the tip of the knife between your fingers, this will stop any damage should you slip whilst opening the oyster. Release the meat from its shell, rinse in cold salted water and return it to the shell. Serve with a teaspoon of caviar and lemon juice if required.
