FOUR PEPPER RUB SEA BASS FILLETS

Fresh sea bass fillets coated with four pepper rub, roasted with slices of fresh lime. This recipe works just as well with silver mullet.

Shopping list

8 Sea bass fillets
Olive oil
Four pepper rub
Lime
1 tin mixed Beans

 

Method

Rinse the fillets and dry with paper towel. Coat the skin side of the fillets with four pepper rub and place cut side down on an oiled tray; place two or three slices of lime top of the fillets.

Roast for five to seven minutes in a hot oven at 200C. Remove when cooked; serve on mixed leaf salad, topped with some mixed beans. Drizzle with extra virgin olive oil.

Serving suggestion

Tomato and red pepper salsa is a great to serve with piquant fish dishes.
