SPAGHETTI VONGOLE
Spaghetti Vongole is a classic Italian dish of clams with pasta. Purely out of personal reference, I have included linguini instead of spaghetti but the choice of pasta is yours.
Shopping list
1 packet LinguiniExtra Virgin Olive Oil
Chopped Chilli chopped
Chopped Shallots and Garlic
1 kg Clams
1 small tin of Anchovy fillets
Chopped Tomatoes (optional)
White wine
Lemon
Chopped Parsley
Method
Cook the linguini in a pan of boiling salted water, until just tender
Heat the olive oil in a pan and cook the chillie, clams, garlic, shallots and anchovies for 1 to 2 minutes.
Add wine and the lemon juice of a lemon and bring to the boil (add the tomatoes now if required).
Add the spaghetti and chopped parsley, toss through until evenly coated.
Serving suggestion
Serve with a bottle of your favourite chilled wine.
