SALMON AND DILL PASTA

Tasty salmon chunks in a creamy dill sauce served with your choice of pasta. Substitute any white fish if preferred. This most time consuming part of this dish is boiling the pasta.

Shopping list

Salmon fillet
Chopped Onion
Double or whipping cream (creme fraiche if preferred)
Fresh Dill (dried if not available)
Pasta of your choice

 

Method

Bring a large pan of water to the boil, add the pasta, and a little oil to the water to stop the pasta sticking. Cook as per instructions on the packet.

Sweat the chopped onion in a little butter or olive oil. When the onion has softened but not coloured add some cream or creme fraiche and heat through.

Add the salmon and allow to cook without curdling the cream.

Add chopped dill, season to taste.

Drain the cooked pasta. Add sufficient pasta to the sauce so that the sauce coats the pasta.

 

Serving suggestion

Serve with grated parmesan cheese if required.

Try this dish with different herbs, such as fresh thyme or tarragon.
