Silver mullet – perhaps a more appealing name than grey mullet – is a rich tasting fish which has a similar flavour to seabass but is slightly fattier.
The flesh is firm, white and meaty, and due to its slightly higher oil content, is incredible when barbecued or smoked over woodchips.
It’s also a great candidate to stuff with lemon and breadcrumbs and bake whole for an impressive centrepiece to serve at a dinner party.
