2 chunky/thick Cod portions fully prepared ready to cook1 x 280g Sicilian cured cherry tomatoes
1 x bottle 6 year old balsamic vinegar

From your larder or garden
Picked thyme
Extra virgin oilve oil
Rocket salad leaves
Method
Coat the cod fillets with some Sicilian tomatoes and oil, the amount will depend on how flavoured you like your fish.
In a non-stick frying pan heat some extra virgin olive oil. Place skin side down and lightly fry the cod fillets until coloured.
Top with picked fresh thyme and Sicilian tomatoes, bake in a moderate oven 150C/320F for about 5 minutes.
Remove from the oven, season to taste adding a little more fresh thyme if needed and a squeeze of lemon if required.
Chef's tip:
The marinated tomato oil with balsamic vinegar makes a super rocket dressing.
This dish would be great served with sea salted chips or saute potatoes and dressed rocket salad.
Balsamic vinegar has a long shelf life and will keep in your larder for future use.
