Come and join the Cornish Fishmonger and development chef Simon Stallard for a day's fish cookery school in Cornwall. Learn all about fish and how to cook fish for all occasions.  Courses are centered around a small group of students starting at 10am and finishing by 3pm.

FISH PREPARATION - SOME OF THE SUBJECTS COVERED

Rob will share his knowledge and experiences gained over 25 years of working with fishing boats and fish.  Topics will include the following and many other useful tips and skills of the trade:

Fish identification
Over 30 different species of fish and shellfish are landed to Cornish fish markets on most days; see for yourself what the fish look like.


Quality and freshness
Learn about how to judge really fresh fish, see the tell tale signs of quality and what to look for in old fish.


Storage
Listen to advice on how to look after fish and seafood in your home; learn how to keep fish fresh for many days.


Preparation
Watch professional filleting staff prepare all types of fish... have a go yourself if you wish?


The secrets of how to buy seafood
Rob will teach you what to look for and what to ask for when buying fish from other sources and also many other tips to ensure freshness.


Shellfish
See Lobsters and Crabs in our salt water tanks, learn about shellfish purification and how to store and prepare them.

See how the professionals cure their fish to age old secret recipes.
