Sea bass is a silvery grey fish, whose fillets appear pan-fried on restaurant menus up and down the country.

Prized by chefs and home-cooks alike for its gorgeous flavour and fine, soft texture, seabass is an elegant and light, and does well paired with delicate summery ingredients such as watercress and dill.

Although overfishing has previously been a problem for seabass stocks, many seabass are either farmed or line caught rather than trawled, making them a more sustainable option for your dinner.
